Beer is brewing in Keller.
Shannon Brewery, the city’s first, plans to have a “soft opening” mid-July, owner Shannon Carter said. The brewery will sell a variety of Irish ales made from Carter’s grandfather’s recipe, with a few modern adjustments.
Carter said the brewery at 818 N. Main St. is still undergoing some construction to add storage, coolers, a front and back patio and work on the front lobby.
Much of the process involves making the brewery a “greener” environment. The water used in the brewery comes from nearby Samantha Springs.
Guided tours, live music, special events and tastings are in the brewery’s future, which Carter says he hopes becomes an entertainment hotspot in the city. He’s planning on having live music Fridays and Saturdays but wants the message to remain clear.
“At the end of the day, we’re a brewery, not a pub,” Carter said. “But we still want to put these things on for people who want to come out and enjoy themselves.”
The brewing process takes about 14 to 18 days from start to packaging with the chocolate stout taking the longest, Carter said. Other flavors include a pale ale, India pale ale, All-American blonde and Irish red.
Carter said he looks forward to the first year of operation and hopes to see the brewery evolve into a greener and more entertaining hotspot.
He hopes to have celebrations on the 10 acres of land the facility owns and possibly bring fireworks back next Independence Day.
